Tomato, Peach & Bacon Bruschetta Toasts

INGREDIENTS:

  • 1 baguette, thinly sliced
  • 1 large tomato, diced
  • 2 ripe peaches, diced
  • 3/4 cup Bacon, chopped
  • 1 cup Ricotta Cheese
  • 1/4 cup Butter
  • 4 tbsp. Blues Hog Raspberry Chipotle
  • Juice of 1/2 Lemon

INSTRUCTIONS:

  1. Preheat oven to 400℉.
  2. Slice your baguette into 1/2 inch slices.
  3. Add baguette slices to a baking sheet and drizzle with melted butter.
  4. Place baguette slices in oven for 8-10 minutes, until crispy.
  5. In a bowl, add diced tomatoes, peaches, basil, bacon, lemon juice, and Raspberry Chipotle BBQ Sauce. Mix well and set aside.
  6. Add ricotta cheese to a food processor and blend until smooth and creamy. 
  7. Once baguette slices are done, spread a generous layer of the whipped ricotta on each slice.
  8. Top each crostini with a spoonful of the tomato, peach, and bacon mixture.
  9. Drizzle with additional Blues Hog Raspberry Chipotle and serve immediately for the best texture and flavor.
