Tomato, Peach & Bacon Bruschetta Toasts
INGREDIENTS:
- 1 baguette, thinly sliced
- 1 large tomato, diced
- 2 ripe peaches, diced
- 3/4 cup Bacon, chopped
- 1 cup Ricotta Cheese
- 1/4 cup Butter
- 4 tbsp. Blues Hog Raspberry Chipotle
- Juice of 1/2 Lemon
INSTRUCTIONS:
- Preheat oven to 400℉.
- Slice your baguette into 1/2 inch slices.
- Add baguette slices to a baking sheet and drizzle with melted butter.
- Place baguette slices in oven for 8-10 minutes, until crispy.
- In a bowl, add diced tomatoes, peaches, basil, bacon, lemon juice, and Raspberry Chipotle BBQ Sauce. Mix well and set aside.
- Add ricotta cheese to a food processor and blend until smooth and creamy.
- Once baguette slices are done, spread a generous layer of the whipped ricotta on each slice.
- Top each crostini with a spoonful of the tomato, peach, and bacon mixture.
- Drizzle with additional Blues Hog Raspberry Chipotle and serve immediately for the best texture and flavor.
