Pork coloring is affected by ACIDITY LEVELS within the meat. Measured by PH, the acidity of pork greatly influences its quality in both FLAVOR & TEXTURE. Marble Ridge pork contains HIGHER PH LEVELS within the meat, giving it a DARKER & RICHER RED color. The lighter the pork, the drier the meat is. Dark, red pork is JUICY, TENDER, & FULL OF FLAVOR.
