Pork coloring is effected by acidity levels within the meat. measured by ph, the acidity of pork greatly influences its quality in both flavor & texture. Marble Ridge Mangalitsa pork contains higher ph levels within the meat, giving it a darker and richer red color. The lighter the pork, the drier the meat is. Dark, red pork is juicy, tender, and full of flavor.
Marbling
Pork marbling is scored on percentage of fats within the muscle/meat of the hog. The creamy white fats marbled Throughout carries more moisture and flavor that melts into the meat as it’s cooked. The delicate marbling within our mangalitSa pork is healthier with monounstaruated fats that melt in your mouth are easier for yout body to digest.
WHAT IS WAGYU ANYWAY?
the mangaliTSa breed is known for its high fat contents – clearly by its name. however, the fats found in this pork are creamy smooth with HIGHER amounts of UNsaturated fats, including omega 3 fatty acids. The breed is also offers natural antioxidants attributed to a well balanced diet, as well as vitamins and mineratls like b1 & zinc commonly found in pork.
